Frédéric BONZOMS
RIVESALTES & MUSCAT (Languedoc - Roussillon)

Our wine estate (30 ha) is situated in the Roussillon county (south of France), which profits from the greatest period of shinning sun in the year.
Our property located in Tautavel, a small village in the mountain side where the cranium of the oldest prehistoric man in Europe was discovered.

We take advantage of a particularly rich soil, primarily made up of argilo-limestones ground, the majority of the vines are on the slopes.





Our field is of average size and we work hard to preserve the authenticity of our wines, in a traditional way and methods that respect the environment: our production is entirely gathered with the hand, we plow the majority of the pieces instead of weeding and we practice traditional methods of wine making. We are applying the protocol of reasoned viticulture (biodynamic).

The cellar has still the lightning of centenary oak. It was primary equipped only with this type of fermenting room, built on the spot at the beginning of the century, with oak from Russia. Currently, a more powerful material is used (stainless fermenting room, destemming machine, regulated cooling system…).





We are farming essentially 4 type of vines: the Carignan which is a Catalan traditional type, the Syrah, the Grenache, and the famous Muscatel, which enables us to produce the Muscat of Rivesaltes and the dry Muscat.

We also planted more recently Chardonnay, which enables us to produce the amber Muscat and the dry white one. And finally, we also cultivate Cabernet for special vintages and Macabeu to obtain sweet aperitif amber wines.





MACABEU
Rivesaltes Ambré

Ref: BO2-Ma

Grapes Varietal:
100% Macabeu, traditional Catalan type of grape

Region - Soil :
- Languedoc-Roussillon, South of France
- rich soil, primarily made up of grounds argilo-limestones.

Vineyard - Area planted:
30 ha. Annual production 50hl. The majority of the vines are on the slopes.

Winemaking Process:
Traditional and respectful methods. Harvest is hand picked. Must and grapes ferment in vat until a part of natural sugar is becoming alcohol. It takes about four days. Colored tannin is extracted during this time. Then juice is run off and fermentation is stopped by adding alcohol to raise up to 15°C. this process preserve natural sugar and aroma of grapes.

Fermentation:
This fortified wine is kept in oak vats. Fermentation according to the methods dating from thirteenth century, then preserved more than 10 years in vat. It is one out of age. Fermenting room stainless.

Tasting:
Appearance: Color amber with the reflections old gold.
Aromas: Strawberry, blackcurrant. Then aromas of cooked fruits, cacao and preserved orange.
Mouthfeel: Sweet, crystallized orange and tangerine, caramel and grilled almonds.

Accompanies:
This wine will be appreciated as aperitif or the dessert made with pastry. It will record savour of fruit salads or melon.

Serving temperature:
12 to 15°C

Storing time:
This wine can be preserved tens of years. Its flavors will evolve to notes of cocoa and burning coffee.




MUSCAT
Muscat de Rivesaltes

Grapes Varietal:
- 50% Muscat of Alexandria,
- 50% small white Muscat

Region - Soil :
Languedoc-Roussillon, South of France

Vineyard - Area planted:
- Muscat is one of the rare varieties that produces a wine which smells like fresh grapes. The best known wine made with it is Muscat from Rivesaltes, from the South of France.
- 5.5 ha, 30 hl/ha

Winemaking Process:
Harvest is hand picked. It is pressed directly into an horizontal press. Then the juice is pumped from through into fermenting vat.

Fermentation:
After cold settling of juice, fermentation lasts two or three days and is stopped by adding alcohol to raise the level up to 15%. This wine is early bottled to keep its youthful aromas.

Tasting:
Appearance: Gold yellow, sparkling, clear, full body.
Aromas: Grape, lemon, banana and mango.
Mouthfeel: Sweet, fruity, sugared smooth, sunny, full of grace.

Accompanies:
As an aperitif. It will also soften the strong taste of French cheese like Roquefort, or will perfect enhance fruit-based desserts.

Serving temperature:
This wine will be appreciated served chilled 8 to 10°C.

Storing time:
This wine can be kept for two or three years but will be better drunk young




GRENACHE NOIR
Rivesaltes

Grapes Varietal:
100% Grenache Noir

Region - Soil:
- Languedoc-Roussillon, South of France
- calcareous clay

Vineyard - Area planted:
50 years old vines south sun exposed.

Winemaking Process:
Traditional and respectful methods. Harvest is hand picked. Must and grapes ferment in vat until a part of natural sugar is becoming alcohol. It takes about four days. Colored tannin is extracted during this time.

Fermentation:
Then juice is run off and fermentation is stopped by adding alcohol to raise up to 15°C. This process preserve natural sugar and aroma of grapes.
This fortified wine is kept in oak vats. Fermentation is made according to the methods dating from thirteenth century. Wine is then kept 4 years in vat. It is one out of age. Fermentation is done in stainless vats.

Tasting:
Appearance: Dark red, dry, clear, concentrated.
Aromas: Strawberry, blackberry, black currant, very fruity, cooked fruits, orange, cherries, figs.
Mouthfeel: Acidity low, smooth, long, fruity, complex.

Accompanies:
As an aperitif. It will also soften the strong taste of French cheese like Roquefort, or will perfect enhance fruit-based desserts.

Serving temperature:
This wine will be appreciated served at 12 to 15°C.

Storing time:
This wine can be kept several years, 14 to 20 years, even an open bottle can stay several months without damaging.
